When all else fails

Cook!  Yesterday was a day I finally had to just surrender too.  I had big plans, but none of it happened.  Kennedy needed mommy at school after she bonked her face on the slide (ever since the teeth incident, any facial “injury” is drama central).  When I finally did have a moment to sew, my sewing machine decided to die.  It’s amazing how a big deadline, the unknown of what I am doing and a bad day can bring on the tears.

I surrendered to the day and decided I should just cook something yummy for dinner.  Cooking is very relaxing for me. So for dinner we had “Curried Sweet Potatoes with Chard and Chickpeas.”   I found the recipe on Pinterest, shocking, which lead to a great blog, VegKitchen with Nava Atlas.  Super simple to make and absolutely delicious!  Even non-vegans would love this one.

After dinner I still had the need to cook and had a bunch of fresh beets in the fridge and remembered a wonderful salad one of my favorite people, Chuck, made many moons ago when we worked together.

Pink Potato Salad! How awesome is this, dark pink potato salad.  It looks like it would be super sweet, but it is simple and savory.   Kennedy tried it this morning because wells it’s dark pink, (those who know her, understand the world revolves around dark pink in her mind) she’s eating her third bowl full know, I believe she likes it.

Pink Potato Salad Recipe

  • 4-6 medium potatoes- cooked and chopped
  • 2-3 carrots- fine chopped or grated
  • 1 small onion- small chopped
  • 2 large beets- cooked, peeled and small chopped (you could use canned if you must)
  • 1 cup or less of vegan mayo (I use Earth Balance, you can you normal mayo for you non-vegans)
  • Salt and Pepper

Put everything in a bowl and mix together, I like it best chilled but it’s good just after mixing too.  Try it and let me know what you think!

This isn’t working

Okay so in my mind working on all my projects was a breeze.  I would work for a few hours while Kennedy was at school, maybe an hour or two on the days she doesn’t have school, and put in a few hours in the evening.  No problem!

REALITY- this is not working! I can’t seem to get a hang of this.  Working on my projects, happened one day in the past week and a half.  There is no way I am going to make my deadlines like this.

So this morning I got up a little earlier than usual, thought I could get in all my email returning before everyone else got up.  I had five blissful minutes before Myles (our kitty) started jumping in my lap with feed me now eyes. Trying desperately to ignore him, I continued on.  The purring and head butting making me bonkers I gave in.  Small delay in emails, back to work…for five minutes. Everyone is up. It’s good, no big deal, I just have one important email to finish.  John is off to work, okay finish email.

“Kennedy please let me finish this, then I will get you some juice”

“Yes you can play with those, wait what are those, no you can’t have the post-it tags”

“I said, No Kennedy.  I just need a few seconds to get this email finished then I will get you juice.  Oh please don’t do that, Kennedy….”

Yep, not working out.

When life throws you tomatoes

I am supposed to be sewing, sewing, sewing but I have had a little distraction for the past two days.

TOMATOS!

We have fantastic friends, the Burgdorf’s, who gave us a few tomatoes…40 pounds of tomatoes! What to do with all those tomatoes?

After convincing Kennedy she can’t be a friend to all of them, I let her keep one, her “favorite tomato friend Quweetra,” we got busy.  Night one we made roasted tomatoes with olive oil, S&P and oregano.  Yummy.  This morning Kennedy made pizza sauce that we froze in two cupcake pans and a few cups of pasta sauce.

Tonight it’s Tomato Chutney.  It’s bubbling on the stove right now, oh my I wish you could smell it!  It’s simply smells amazing!

Tomato Chutney

  • 2 pounds small chopped & peeled tomatoes
  • 1 cup light brown sugar
  • 4 teaspoons grated ginger
  • 8 cloves
  • 2” cinnamon stick
  • 4 teaspoons apple cider vinegar
  • Zest and juice of one lime

Toss everything into a pot and let simmer on medium for about an hour and a half to two hours.  It’s done when you dip a spoon into the chutney and it very slowly drips off.  Let cool, fish out the cinnamon stick and 8 cloves, put in a container and enjoy for up to two weeks.  (It won’t last that long!)

This chutney is sweet, tangy and has a very slight kick, you have to try it.

Excited, Overwhelmed and finding Balance

How can it be September? Time sure does fly these days and I really have to think about what we have been doing this summer.  We did a bunch of swimming and playing with friends.  Jelly Bean factory and Zoo visits.  Visiting family and friends in Sebastopol.  No real vacation or family trip anywhere, we didn’t even make it to the beach, which is truly just wrong!

This past week John and Kennedy started school. John is starting his journey of working towards his Masters in Public Policy Administration.  Kennedy is starting her second year of pre-school.

I was feeling a bit left out, for about a minute. Then I realized my “to do” list is out of control!  In my “past life” (in my world that means before child) this amount of work would not have fazed me for a second.  But today, breath… it’s a lot!  How do people work, be a parent, a wife, keeps the household running and work on a home business too?  How do you find balance?

Excited! I am super excited with all of my up and coming craziness! The day after my birthday in July, timing just felt right to “go for it.” I don’t know how to explain it, but I knew the timing was right to apply for a art/craft show, and I got it! I knew the timing was right to jump into freelance design work, and I got it! I knew the timing was right to say “yes no problem” to the school board, and I got those too! I knew the timing was right to start an online Etsy business with my mom, and we are working on that! Everything is falling into place.

So here it is, the master “to do” list:

  1. Davis Art Center Holiday Art Show, Vintage Princess by M.E. is a vendor, November 30, December 1 & 2.
  2. Freelance design and drawing for SF interior designer’s furniture & lighting collection
  3. DPNS school board VP or External Affairs & Ad Hoc Alumni Fundraising Campaign co-chair
  4. Pink Floor Studio on Etsy with mom, coming in October!
  5. Normal life, wife, mommy, June Clever & Martha Stewart want-to-be

Breath… It’s only five items, should not be that bad.  I will keep telling myself this! Breath… How do I find balance and time to do all this? Breath… How do I stay on track?  Breath… How do you find balance in your life with all the projects?
